Ratatouille Recipe

A rich and flavourful vegetarian dish perfect for the summer heat.

  1. Slice all vegetables thinly
  2. Place eggplant in a colander and sprinkle with salt to remove water content
  3. Pat eggplant dry and cook in olive oil in a large skillet over medium heat for 10-15 minutes.
  4. Add zucchini to skillet and cook for 3-5 minutes. Then add onion, pepper and cook for 5 minutes.
  5. Stir remaining olive oil and garlic into skillet
  6. Add thyme, vinegar, and black pepper and stir for 10-15 minutes until ratatouille is thick.
