Ratatouille Recipe
A rich and flavourful vegetarian dish perfect for the summer heat.
Ingredients:
- 1 medium-large eggplant
- 6 tbsp. extra-virgin olive oil
- 2 medium zucchini
- 1 red or yellow bell peper
- 3 garlic cloves
- 1 lbs. tomato
- 2 tsp. fresh thyme leaves
- 1 tbsp white wine vinegar
- Freshly ground black pepper
Steps:
- Slice all vegetables thinly
- Place eggplant in a colander and sprinkle with salt to remove water content
- Pat eggplant dry and cook in olive oil in a large skillet over medium heat for 10-15 minutes.
- Add zucchini to skillet and cook for 3-5 minutes. Then add onion, pepper and cook for 5 minutes.
- Stir remaining olive oil and garlic into skillet
- Add thyme, vinegar, and black pepper and stir for 10-15 minutes until ratatouille is thick.
